Apple & Berry Smoothie
Sometimes during the hot summer weather, I find I can't enjoy heavy meals as much so this recipe is perfect for me when I feel like something. PLUS it's healthy!!
Ingredients
1/2 to 1 can of coconut water (no more than 350 mls)
6 - 12 raw almonds
1 apple, cored
One handful of frozen berries you
1 teaspoon of manuka honey
1/2 teaspoon of ground cinnamon
Method
Place everything in a blender and blend until smooth.
Pour and enjoy!

The Benefits of Coconut Water
With my husband Gig living the paleo lifestyle and embarking on marathon running, he was struggling to find natural products to replenish his energy levels. Particularly when you are running 42 kilometres. His first "paleo" marathon was in Rotorua and he found some natural boosters made with honey and molasses and unfortunately for him he cramped at the 26 km mark. Fair to say, he was very disappointed he couldn't run the whole way, but he did end up finishing the marathon, even if he walked/limped the remaining 16 kms.
He then told me he wanted to run the very first ever marathon in Queenstown. My immediate reaction was he needed to find a better supplement and suggested coconut water. He wasn't too keen at first, but I had read a number of articles of how beneficial it was.
Rule #1 It's a natural isotonic beverage, with the same level of electrolytic balance as we have in our blood. So basically, it's just as good as getting a blood transfusion. In fact, I read that during the war, soldiers wounded in the pacific recieved emergency plasma transfusions using coconut water siphoned directly from the nut.
Rule #2 It has more potassium and less sodium than most sports and energy drinks and contains natural sugars as opposed to altered sugars found in sports drinks and energy drinks. It also has calcium, magnesium and phosphorous.
Rule #3 It regulates your body temperature, raises your metabolism, boosts your immune system, cleanses your digestive tract, helps regulate diabetes, improves poor circulation and helps treat kidney and urethral stones.
Rule #4 It's got 0 cholesterol and is 99% fat free. In saying this, I'm not a fan of fat free ratings, because in reality there are some essential fats that our body needs which has a result of raising the bodies cholesterol level in a good way. But for those who love the fat free ratings and lower cholesterol levels, then this rule definitely fits in.
Rule #5 For those who struggle with dairy products, coconut water is a great substitute for milk and yoghurt in a smoothie. PLUS it's a great substitute for liquid or powdered stock when cooking. A can of coconut water can add huge benefits to a stew, curry and even a boil up.
Rule #6 It's a great cure for a hangover! Although getting a hangover isn't what I'm promoting here, if you do manage to consume a little too much than you should, remember Rule #1? Just like getting a blood transfusion.
Rule #7 When consumed, it moisturises your skin from within and eliminates unnecessary oils. It even has the ability to clear acne and tone the skin if applied to the skin. That doesn't surprise me considering coconut oil has some tremendous benefits to our skin too. I blogged about coconut oil in THE MAGIC OF COCONUT OIL.
Gig did find a coconut water that he liked and started filling his water bottles on his training runs. He noticed a tremendous difference in how his body reacted to exercise after that and he went on to run the Queenstown marathon.
From my own personal perspective, I've found myself cooking a lot more dishes using coconut water now. I've even taken to making a smoothie prior to conquering the famous Hakarimata ranges. I find my energy levels allow me to make it to the top with energy to burn to come back down, whereas before I struggled to get to half way.
If you find yourself wanting to incorporate coconut water into your lifestyle, I highly recommend it. There are some expensive products on the market but you can pick up a tray at the asian market for less than $1 per can. If you find you can't stomach drinking a can or bottle straight, then try smaller steps like I have suggested by using it in cooking.

Healthy Paleo Berry Smoothie
My husband has been following a paleo lifestyle for a few years now. I blogged about it briefly in MY I-C-E Challenge - Cancer Awareness.
To him it was a lifestyle change for the better and the lifestyle fits in really well with our life on the Ponderosa. As time has progressed, I find that myself and my daughters are now finding more paleo friendly recipes to experiment with and we are enjoying the benefits of having more energy.
This recipe is something really quick and easy to prepare when you're on the run to work in the morning OR if you need a quick energy boost before some exercise.
It's delicious and I find I experiment with the different berries I have available in my fridge or freezer. If you don't have berries, then that's ok. Add mango, peaches or whatever you have. If you are using tinned fruit, make sure they are in water and not syrup.
Ingredients
1/2 to 1 can of coconut water (no more than 350 mls)
1 banana
6 - 12 raw almonds
One handful of strawberries (or whatever berries you have fresh or frozen)
1/2 - 1 teaspoon of manuka honey dependant on your sweet tooth
Method
Place everything in a blender and blend until smooth.
Pour and enjoy!

My Homemade Limoncello
This week I decided to bottle my two batches of limoncello that have been brewing for at least 6 months. Yes that's right - 6 months, and between me and you, I am very excited about it!! Why, because the alcohol that I have used was gifted to me by two different set of very good friends. The first is from Rewa and Pia Harre and is brewed from grape skins and the second is from Bung and Ness Williams from Auckland, although the brew actually came from Bung's brother in Canterbury using a special recipe.
I haven't really been this excited about bottling a batch since I was asked by Bung and Ness to make a special batch for their beautiful wedding at Mantells. Just quietly though, I was more nervous than excited after Ness told me they were going to hand out a glass to everyone at the end of the night as the last toast and the reality hit that everyone was going to have glass. Eeekkk, what if it didn't turn out right!!!
I believe everything you enjoy doing should be done with love, so the results turn into a positive outcome. Fair to say, I put a lot of love into that batch and I was so pleased hearing the wonderful comments at the wedding once the final toast was made.
Limoncello was my very first liqueur that I decided to
try out. The idea initially started when
I was watching a travelling program which involved Italy and it stated that
Limoncello was very simple to make. All you need is lemons, alcohol (the higher percentage the better - the program stated 80% alcohol) and sugar syrup and time to wait for the two step brewing process to get the finished product. Of course I thought wouldn’t it be great to make and give out to all
my friends as a xmas gift.
They were definitely right. It was simple to make but
the brewing took some time to get the right results but well worth the wait
with all my friends giving me rave reviews.
Of course it’s not easy to get 80% alcohol in New Zealand unless you find someone who brews their own, so my first couple of
batches were made with good quality vodka (which wasn’t too bad considering it
diluted the alcohol content which resulted in a lot more happier people in the
morning).
The longer you brew the liqueur the better the taste
so if you’re pressed for time, this recipe isn’t for you I’m
afraid, but trust me when I say it’s all well worth the wait. There is one recipe out there though which my good friend Viv makes which takes a day or so to brew and I believe less than a day to for her and her wonderful husband Kev to drink :-)
If you don’t like a sweet liqueur then simply
add less sugar syrup to the recipe and it MUST be stored in the freezer. Don't worry though, this is where the high alcohol content ensures the liquid doesn't freeze, it only keeps it chilled for ready use.
Since my first batch and my first lot of Xmas gifts to my friends and family, I have continued to make this wonderful liqueur and I hear it doesn't last very long at all once it's given out.
So here's the finished product :-) plus what each step looks like. I started a new batch on the weekend so you can see the difference in colour as the brew is allowed to do it's thing after time.

The idea of a nice glass of chilled limoncello on a summers evening or as a after dinner treat with some good company really appeals to me. In fact that's exactly what we did last night. Simply delicious!!!
